Citrus hystrix - Combava

 

The kafir lime is a very irregular citrus fruit with thick foliage. The thorny double leaves grow up to 12 cm in length, and the flowers are very scented. The fruit measures about 3 cm and can be round or oval shaped. The skin is very wrinkled and bumpy, with colour ranging from bright to dark green.

The extreme acidity of the kafir lime means it cannot be eaten fresh, but the zest is used as a spicy ingredient in salsas and condiments; in thin slices as a garnish for fish dishes. Its leaves are particularly popular as a base in many salads.
